Do you find that you buy all these vegetables and they go bad in your fridge? I roast veggies almost every night of the week and I always have extra that I throw into a salad or a bowl the next day. πŸ₯— πŸ₯— πŸ₯—

Here is my new favorite salad dressing recipe: β €β €β €β €β €β €β €β €β €
Ingredients
Β½ cup tahini
Β½ cup sun dried tomatoes
ΒΌ cup lemon juice
1/4 cup olive oil
1 garlic clove
water
salt and pepper for seasoning
β €β €β €β €β €β €β €β €β €
Directions:
Combine all ingredients except for water in a high-speed blender or food processor and blend for 30 seconds. With the blender still running, add water to reach the desired consistency, about ΒΎ cup. Blend until all ingredients are well combined. Store in the refrigerator in an airtight container for up to 2 weeks.
