Kale and Quinoa Salad Recipe

  • 1 bunch of green kale cleaned and chopped finely

  • 2 cups of cooked quinoa

  • 2 persian cucumbers small diced

  • 1 small granny smith apple peeled and small diced

  • 1 bunch of curly parsley picked and chopped finely

  • 1 shallot finely minced

  • 1 heirloom tomato small diced

  • 2 tbsp of mint finely sliced

  • 2 garlic cloves finely minced

  • 1 tbsp of dijon mustard

  • 1-2 lemons worth of juice

  • ½ cup of olive oil

  • Salt and pepper to taste

  1. Combine all the ingredients in a mixing bowl except the lemon juice, olive oil, shallot, garlic, and dijon mustard.

  2. In a separate bowl, whisk together the lemon juice, olive oil, shallot, garlic, and mustard to make a vinaigrette.

  3. When ready to serve, pour the vinaigrette over your pre mixed greens and quinoa. Season with salt and pepper, serve immediately.
