Cast Iron Waffle Maker

Below, I’m sharing my favorite waffle recipe that’s perfect for slow weekend mornings with the kids.

Cast-Iron Stovetop Waffles

Makes about 4 waffles

Ingredients:

• 1 ½ cups flour (I like the Spelt from One Degree Organics)

• 2 tsp aluminum-free baking powder

• ½ tsp baking soda

• ¼ tsp salt (I like Jacobsen)

• 1 ½ cups milk (I like homemade nut milk or Malk)

• 2 eggs

• ¼ cup avocado oil (I like Chosen food) or melted coconut oil (plus more for greasing)

• 1 tsp vanilla extract or vanilla bean

• Optional: 1 Tbsp maple syrup or coconut sugar for a hint of sweetness

Instructions:

1. Preheat your cast-iron stovetop waffle iron on low-medium heat for 5–10 minutes on each side. Cast iron needs to be evenly heated to avoid sticking.

2. In a large bowl, whisk together dry ingredients.

3. In a separate bowl, beat eggs, then mix in milk, oil, vanilla, and optional sweetener.

4. Pour wet into dry and stir until just combined. Don’t overmix.

5. Grease both sides of the hot waffle iron well with avocado oil or ghee using a silicone brush or a paper towel (reapply between batches).

6. Pour about ½ cup of batter into the center of the iron. Close and cook for 2–3 minutes per side, flipping halfway. Time may vary depending on your pan and stove.

7. Carefully open and use a fork or silicone spatula to lift the waffle out.

8. Serve warm with fresh berries, maple syrup, or nut butter.

Tips to Prevent Sticking:

• Always preheat the cast iron thoroughly before adding batter. Cold iron = sticky waffles.

• Use a generous amount of high-heat oil like avocado oil or ghee. Avoid spray oils with propellants.

• Let the waffle cook fully before opening the pan — premature opening leads to tearing.

• Season your waffle iron just like a skillet: a few batches of high-fat recipes (like waffles) will build a natural non-stick coating over time.
