Butternut Squash Mac and Cheese (Vegan & Gluten Free!)

On the menu today...Vegan gluten-free veggie-loaded mac and cheese with @andean.dream quinoa pasta, roasted @kandarianorganicfarms chickpeas, cucumbers, @harrysberriesstrawberries, homemade fruit leather & avocado (my kids are obsessed). Plus, it’s such a healthy fat, it’s great for growing brains (Mashed avocado, a squeeze of lime and a sprinkle of pink salt)

🧀 My Butternut Squash Mac & Cheese recipe: 🧀
1 lb of peeled diced butternut squash
1 lb of riced cauliflower
2 large yellow onions diced
2 shallots diced
1 bunch of fresh thyme
10 smashed garlic cloves
zest from 1 lemon
1-2 lemons worth of juice to taste
1/2 cup EVOO
1 cup of @artisanaorganics creamy cashew butter
1/2 cup @bragglivefoods nutritional yeast --> Go to my blog for instructions!
