French Toast Muffins
Everyone is always asking me for new ideas for breakfast and on the go snacks that aren't messy! 😋😋😋
This is one of my favorites. 😍 They are protein packed and filled with good fats for growing brains!
"French Toast" muffins
Gluten/Dairy Free packed with protein!
1 organic pasture raised egg
1 large ripe banana
1 cup grated carrots (peel first)
1/2 cup ground hemp seeds (I used the magic bullet to grind fresh hemp seeds)
1/2 cup @sproutedflour gluten free rolled oats (grind up into a flour)
1/4 cup maple syrup
2 tablespoons kitehill cream cheese
3/4 cup almond pulp (from making almond milk)
1/4 cup almond milk
2 teaspoons @frontiercoop vanilla (get one with no alcohol)
2 teaspoons @frontiercoop Ceylon cinnamon
1/2 teaspoon baking soda
Mix all together in vitamix or a strong blender and scrape down on sides frequently. Use a mini muffin liner and @ifyoucare_usa unbleached parchment paper liners. Melt coconut oil and brush the coconut oil on each liner to make pealing the muffins off easier! Cook on convection at 350 degrees. Turn the pan after 9 min if you have hot spots in your oven which most do. Cook for a total of 16-18 minutes (depends on how hot your oven runs). Makes 24-30 mini muffins.
