My New Favorite Salad Dressing Recipe

Do you find that you buy all these vegetables and they go bad in your fridge? I roast veggies almost every night of the week and I always have extra that I throw into a salad or a bowl the next day. 🥗 🥗 🥗

Here is my new favorite salad dressing recipe: ⠀⠀⠀⠀⠀⠀⠀⠀⠀
Ingredients
½ cup tahini
½ cup sun dried tomatoes
¼ cup lemon juice
1/4 cup olive oil
1 garlic clove
water
salt and pepper for seasoning
⠀⠀⠀⠀⠀⠀⠀⠀⠀
Directions:
Combine all ingredients except for water in a high-speed blender or food processor and blend for 30 seconds. With the blender still running, add water to reach the desired consistency, about ¾ cup. Blend until all ingredients are well combined. Store in the refrigerator in an airtight container for up to 2 weeks.
