Veggie Fritters

Making Veggie fritters


What you will need:
✅ Corn (you can use frozen too)
✅ Zucchini shredded
✅ Onion diced
✅ Two eggs (I used @apricotlanefarms pasture raised organic)
✅ 1/2 a cup - 1 cup of flour of choice (chickpea, oat, or einkorn)
*I like @Kandarian chickpea or oat flour or @jovialfoods einkorn flour

Cooked in @fieldcompany cast iron pan with @jovialfoods olive oil *this is a light fry so I don’t mind using olive oil. You can also use avocado oil.

Use a spoon to spoon a portion onto pan. When edges bubble, then can flip. Done when golden brown
